thatは省略可能です。ただ、入れた方がしゃべる際、Pauseがそこでできるのでいいかなと。ちなみにfind outは「わかる、判明する」って意味ですよ。

私も英語は第２外国語ですから、トピ主さんの英語を評価するのは難しいですが、口で言い表してみて、「変だな」「長くて言いづらいな」と思った場合は、より簡単な表現に変えるように心がけてみてください。その方が相手に伝わりやすいですよ。

余談ですが、kind ofに関する用法上の争点はむしろ、「those kind of photos」が許容かどうかという点のようです。一般には口語では使うがフォーマルでは不可とされています。ただし、Webster’s Dictionary of English Usageのように、書き言葉としても確立しつつあるという立場もあるようです。
