Hi everyone! I would like to meet people from Okinawa. Well, you don't have to be from Okinawa but it would be nice if you can cook. I really like goya and want to learn how to cook Okinawa food. I can make ラフテー and チャンプルー. They taste good but I don't know if they taste right. Help me!
I am a fluent English speaker and my Japanese is about 30-40%. We can do language exchange while I burn food. =)

Thanks 4983~ I am a fan of cooking with dog too. =) But sometimes, their style of cooking some dishes isn't the best way. I actually know how to make rafute and chanpuru but I am not sure if the flavours are right. I actually have a book on just cooking goya haha. I used to eat Okinawa food at a really good restaurant near my apartment when I was living in Sendai but I'm starting to forget =(
I kind of figured out my own recipe by trying to copy the type I had in Sendai. What do you think?
1 goya
2-3 eggs
sesame oil
1/4-1/3 can of spam
Handful of moyashi
1.Salt the goya after removing the white insides, wash after 10-15 minutes. Don't use Indian goya because it's super bitter!
2. Cut the spam into thick matchsticks
3. Press the tofu to remove water (or you can by this firm fresh tofu from a Korean grocery store on Broadway)
4. Add sesame oil and cook the spam until a little brown. Remove from pan.
5. Add a little more oil, break tofu by hand and grill until brown and a little firmer.
6. Throw in the goya, add moyashi just before it is ready and cook until .....cooked. =)
7. Remove everything.
8. Add the eggs without mixing (more interesting texture than mixing before adding) and mix while cooking until it is 3/4 cooked.
9. Add everything and a little soy sauce
10. Put in a plate and finish with ?katsuoboshi?
