I used to make pancakes in a resturant when I was in toronto a long time ago. secret is "buttermilk" and to beat it a lot to make it very soft. I still make them same way :)
to make it moist you must put more water in the dow and make sure you brush the pan with oil or spray pam. I don’t know how to bake but when I tried and had problems I was told to put more water in the dow.. too much water is bad.. too little makes it dry.. it has to be perfect. I tried to make malaysian bread and they were too dry :(
