Job Summary:
As a Sous Chef at Ama Cocktail & Raw Bar you will play a crucial role in the kitchen team,
assisting the Executive Chef in executing a menu that highlights the finest raw seafood and
inventive cocktail pairings. You will lead by example, fostering a collaborative and positive
kitchen environment, ensuring high standards of food preparation, presentation, and
cleanliness. Your passion for culinary excellence and your ability to manage and inspire a
team will be key to your success in this role.
Key Responsibilities:
1. Culinary Leadership: Collaborate with the Executive Chef to develop and execute
creative and seasonal menus that showcase raw seafood and cocktail pairings.
2. Kitchen Management: Supervise and lead the kitchen staff, ensuring smooth
operations during service and maintaining a safe and efficient work environment.
3. Food Preparation: Oversee the preparation, cooking, and presentation of all dishes,
ensuring they meet the highest quality standards and adhere to established recipes.
4. Inventory and Ordering: Assist in managing inventory levels, ordering supplies, and
maintaining cost control measures to maximize profitability.
5. Quality Control: Conduct regular quality checks to maintain consistency in taste,
presentation, and portion sizes.
6. Training and Development: Train and mentor junior kitchen staff, fostering their
growth and ensuring adherence to safety and sanitation standards.
7. Menu Development: Contribute ideas and creativity to menu development, staying
current with culinary trends and local sourcing opportunities.
8. Health and Safety: Uphold strict adherence to health and safety standards, including
food handling, sanitation, and kitchen cleanliness.
9. Collaboration: Work closely with the front-of-house staff to ensure a seamless dining
experience for guests.
10. Flexibility: Be willing to assist in various kitchen roles as needed, including
dishwashing and food preparation during busy periods.
Qualifications:
- Proven experience as a Sous Chef or in a similar role in a high-end seafood or fine
dining establishment.
- Culinary degree or equivalent experience in a recognized culinary institute.
- Extensive knowledge of raw seafood preparation, seafood sourcing, and cocktail
pairing.
- Strong leadership and interpersonal skills with the ability to motivate and train kitchen
staff.
- Exceptional organizational and time management abilities.
- High standards of cleanliness and a commitment to food safety.
- Creativity, a passion for culinary excellence, and the ability to adapt to changing
menus and specials.
- Strong communication skills and the ability to work collaboratively with the kitchen
and front-of-house teams.
